Cold Salad for Kid's Lunch

Nutritious and Tangy !


Cold salad is quick and easy. It is also filling for your kids in their lunch boxes. Whenever I make pasta for my kid, I save a small cup of boiled pasta to make this salad for the next day. It adds up to a tasty meal.


All you need is:

1 cup boiled pasta

1 large chopped Tomato

1 half of a large cucumber (chopped)

Fresh lemon juice - 2 teaspoons

Coriander and garlic paste

Oregano, or any herb

Little olive oil to drizzle

Salt

Sesame seeds

Honey (optional)


Coriander-garlic paste :

Add a bunch of fresh coriander leaves with a few pods of garlic, add salt, cumin seeds, 2 spoons of roasted peanuts and 2 chillies. This paste is similar to our Maharashtrian green chutney.


How do we make it ?

It is super easy, not any rocket science! Mix up the boiled pasta with chopped Tomato and chopped cucumbers, you can also add more veggies but it alters the taste of the salad and the kid might not enjoy it. Add little oregano, salt, a drizzle of olive oil or any other oil.

I sometimes have coriander-garlic paste handy in my fridge. It goes well with many dishes and recipes. So, also add this green paste to the salad, add some sesame seeds and fresh lemon juice. Mix well and serve it. This is a cold salad because there's no cooking involved. You can store it the fridge for a day and not more than that.

Honey and sesame seeds are optional. Depending on your kids taste buds. Have a great meal !
