Healthy Baby Corn

Best recipe for your hungry tummy. You can have it as mini meal as well. A healthy recipe for weight watchers and diabetic patients. Recipe : What do I need ? Peeled and boiled baby corn, few garlic pods, curry leaves, butter/oil, salt, peppercorn, chillies, coriander leaves.


Method : 1. Boil the baby corn (do not discard the leftover water, use it in soups and stews). Chop the baby corn in small cuts (long or round). 2. Take a pan, add some butter or oil. Chop the garlic into finer pieces and add them to the butter. 3. Add the curry leaves and peppercorn. 4. Add few green chillies (optional) 5. Now comes the hero of the recipe, the chopped baby corn, add it to the pan and saute on high flame while stirring. 5. Add a little salt and coriander leaves, stir it and serve it hot. This is great as a side dish or as a snack for kids (ofcourse without the spice). Fills your tummy and is great for your gut. Low on calories and high on fiber makes it a great dish for diabetics.
