Mushroom Soup and it's health benefits !
Mushrooms are extremely healthy and rich in many vitamins and minerals. There are many recipes made from mushrooms but as I am a soupoholic, I am sharing this amazing recipe.

This recipe requires : (Serves 3-4)
A pack of fresh mushrooms, 1 onion, 5 cloves of garlic, a small cube of ginger, salt, water, cream or milk, peppercorns, coriander leaves, butter/oil.
Preparation:
As I am a busy working mother, I try to make recipes really quick but also healthy and tasty. This is one of the easiest recipes and makes a great meal. This is an ideal mid meal for diabetics as mushrooms are low in calories.
1. Wash your mushrooms thoroughly and drain them.
2. Heat a pan, add a spoon of butter or oil. Add the 5 cloves of garlic and chopped cube of ginger into the butter.
3. After 30 seconds, add roughly chopped onions. I have chopped one onion.
4. Saute the onion, ginger and garlic in the butter and add few peppercorns.
5. At this point, I have added whole mushrooms. I have not chopped the mushrooms and this saved my precious time.
6. Saute the mushrooms on high flame for a minute and then close the lid. Do not add salt.
7. Let the mushrooms cook in it's own water for a while.
8. Your mushrooms will be done in 5-8 mins. Let this cool down.
9. Once it is cool enough, blend it into a smooth and fine paste.
10. Add 2 cups of water to this blended mixture to dilute and add little salt and half a cup of milk or fresh cream.
11. Adding milk or cream will enhance the taste and also make it rich. You can avoid this step if you don't want.
12. Place the soup on the stove and let it boil for 2- 3 mins.
13. Add the finely chopped coriander leaves and serve it hot.
