Nutritious One Pot Vegetable Soup!

Soups are always deliciously enjoyed by all age groups. It can be a go-to dish for the sick days. This one pot Vegetable Soup is one of the easiest and also nutritious dish for those lazy days as well.

This soup has the goodness of many nutrients, vitamins and fiber. And the best part is, this is an easy recipe wherein even a bachelor can make it without any struggle. Most of the times, we see that people either go to a restaurant to have their warm cup of soup on a rainy evening or for those winter nights. And others buy a premix instant soup packs as their go-to meal. There's is nothing harmful about this regime but it is more healthy and safe when you make it at home.





So, let's make this process easier with the instructions.

- What do we need ?

Vegetables, water, salt, pepper, oil or butter, ginger, garlic, coriander and a mixer grinder

- What Vegetables do we need ?

Onions, ginger, garlic, carrots, tomatoes, beans, capsicum, potatoes, broccoli, sweetcorn

(You can always add vegetables of your choice)

- Can we use chicken broth instead of plain water ?

Yes definitely!

- I have used plain water as I am a vegetarian.

- Now I don't have to tell you to take a huge pan where you can make atleast a good amount of soup because you already know it!

- You can add butter or oil to the pan once it is warm. Add the finely chopped ginger and garlic.

- Add the chopped onions, roughly chopped tomatoes, carrots, broccoli, capsicum, beans, sweet corn, potatoes, and saute them for few seconds.

- As I am making it for 3 people, I have used 1.5 ltrs of water added to these sauteed vegetables.

- I don't recommend adding salt at this point. Salt is only for seasoning. Close the pan with a lid and let the Vegetables cook in the water for a while.

- Let the vegetables still be in their shape, not too soft and mushy once cooked.

- Once the cooking is done, you can strain the Vegetables from the water and this water becomes your Vegetable broth.

- You can save this broth for multi purpose recipes.

- This broth has got most of the nutrients absorbed from the Vegetables we cooked.

- You can save some of the vegetables and add in pulao/gravies or dals and puree half of them.

- Mix the pureed Vegetables into the broth and mix it well. You can strain the puree or just add it as it is. Let it sit on a medium flame for a while.

- You can now add little salt and pepper and suit your taste with finely chopped coriander.

- That is it! This fills up your tummy just like a complete meal.

- Best when you are on a diet. Good for babies and toddlers. Boosts immunity during sickness. Easy to swallow for elderly people.

- The pureed Vegetables in the soup have fiber and helps in digestive related issues as well.
