Stir fried Amaranth is much tastier with rice and roti. What do we need ? Amaranth leaves, 4 to 5 crushed garlic pods, mustard seeds, cumin seeds, 1 tablespoon oil, curry leaves, asafoetida, sesame seeds, 1 onion chopped, cashews, turmeric, salt. How do we make it ? 1. Chop 1 onion and 150 gms amaranth leaves 2. Heat a pan, add oil, mustard, cumin, asafoetida, curry leaves and the crushed garlic pods and sautee 3. Add the chopped onions, cashews, turmeric and saute for 4 mins on low flame 4. Add the chopped and washed amaranth leaves into the pan, stir fry on high flame for a min. 5. Let the amaranth steam on low flame for about 5 mins. Add salt and sesame seeds. Stir about a min and serve. I always believe in 'Healing With Food'🦋🦋
