Tofu:
Made from fermented soy beans. Great form of plant protein
High in minerals
Good form of fiber and carb

Boosts immunity
Ingredients :
Beans, onion, carrot, cabbage, tofu, spring onions, ginger, garlic, salt, coconut milk, thai paste or red chilli paste, oil and water.
Preparation :
1. Finely chop your vegetables, ginger, garlic and tofu.
2. Heat a large pot, add 1 teaspoon oil, add finely chopped or minced ginger and garlic. Saute for a minute.
3. Add the onions, carrots, beans and cabbage. Saute for few minutes on high flame.
4. Add 600-700ml water to the vegetables, reduce the heat, add chopped tofu.
5. Let this boil for 3-5 mins.
6. Now add required salt and thai red curry paste. If you don't have thai red curry paste, you can soak red chillies+garlic in little water and grind them to paste and use this instead. Let this boil for a minute.
7. Add around 100 ml of coconut milk and switch off the flame. Add the chopped spring onions.
8. Thai Tofu Soup is ready to be served. ❤️
