TOMATO CINNAMON SOUP !
Tomatoes are rich in lycopene, Vit C and antioxidants. It boosts immunity, reduces inflammation, maintains blood pressure, supports bone health, reduces the risk of cancer. I give a lot of importance to soups as they help in nutrient absorption and also help with detoxification. Ingredients : 3 tomatoes (makes one bowl of soup), one small cinnamon stick, butter, garlic, salt, water, spring onions, pepper. Method: 1. Blend 3 tomatoes into smooth paste along with a small Cinnamon stick. Cinnamon adds flavour and also is a good anti inflammatory herb. 2. Heat a pan, add half a spoon of butter and finely chopped garlic. 3. Saute for 20 seconds and add the blended tomatoes into the pan. 4. Now add 300 ml water, stir,close the lid and let it cook for 7-8 mins. 5. Once it is done, add little salt, pepper and chopped spring onions. You can also add half a spoon sugar (raw or unrefined). I don't strain this soup. This is great as it is (no fiber lost). 6. The soup will be thick and you don't have to add any cornstarch. 7. Serve the soup hot and enjoy with a toast.
